Oolong tea is a semi-oxidized tea harvested from the Camellia sinensis plant. What makes it different from black or green tea is the way it is oxidized. Oolong tea goes through a process that withers the plant under sunlight, causing partial oxidation. Then, for the most part, the leaves are curled and twisted. It is one of the most complicated teas produced because of the unique tea plant cultivars that are exclusively used for the many varieties that make up oolong teas.
Because oolong tea is oxidized at such varying levels, its flavor profile can be extremely broad. It can range from bold, toasted and full-bodied to light, grassy and floral. That's what makes oolong so fun!
